Consider a situation,you have ordered a plate of french fries. After you got the fries,you forgot to have it and got busy in gossips with your friends. After some time your eyes went to that plate full of french fries. You asked your friends to have it. But all of you found that it is cold and the taste of the fries is so bad having no aroma. You complained about it to the manager and gave feedback that fries are not of good quality.

Grainy,flavorless, rigid,yet soggy- is there anything worse than those old and cold french fries? Have you ever imagined why the aroma and flavor of the fries were gone?

The main reason behind this fact is the texture change of the fries while they got cold. Generally starch tastes good when we hydrate it. Potato is having starch in the form of small spherical crystals. At very high temperature generally in fryers water inside the potato gets into the starch crystal spheres. Fill them up like balloons and make the fries poofy. And this causes the fries to be more crispy and this poofy texture is liked by people very much.

But as fries cool down the water comes out of the sphere converting it into a tiny crystal sphere again. Nut after coming out where the water goes? It directly comes to the crust part of the fries and that turns the crispy crust into a soggy mess.

Temperature also affects the flavor of the fries. More the heat more delicious the fries will be. Once the fries get to cool down its flavor also decrease.

Finally, smell also plays a big role in how a food tastes. Fresh french fries have good aroma but when they get cold they lose the aroma. Without smell, a lot of flavors disappears.

So there is no fault of the cook if your fries taste so bad or giving no aroma. It is the effect of temperature. More the temperature more the flavor and less the temperature less the flavor.
