Cooking:A pan is used to heat the mixture of sugar, water and corn syrup. The temperature of this solution has to be maximum 240ยฐF(115ยฐC) that is the soft ball stage on the candy thermometer. And on the other hand, take around 60 grams of gelatin in the beater and break it. If you want to make some specific flavour marshmallows then the boiling time is the best time to add flavours. E.g. if you want to make coffee flavoured marshmallows then instead of water a concentrate of dark coffee has to added. And the temperature for boiling changes according to the ingredients added.
Forming:The hot boiling mixture is then added by gelatin. Air is pumped into the mixture. The mixture cools in a tempering kettle, passes through another filter, and Marshmallow continues on to the โhill.โ Marshmallows are extruded through a machine or deposited onto bands.
Cooling:After the marshmallows have been extruded they are in a shape of pillows. These pillows are then sent through a cooling drum, which extracts the excess starch. In this whole process the temperature of the marshmallows comes down significantly making them suitable for packaging.
Packaging:The marshmallow pillows are cut into small cubicle pieces. Around 6-7 marshmallows are packaged.
