Bebek Goreng Madura. Indonesian Fried Ducks with Sambal Pencit (Green Mango Sambal)

This time, I’m sharing you Indonesian famous fried ducks “Bebek Goreng Madura“, “Bebek Madura” , “Bebek Goreng Bangkalan” have 2 perfect matches to enjoy with; sambal pencit and poyah (toasted spiced coconut). The poyah is made by using the leftover broth from cooking ducks with spices and water. However, I was using coconut water instead of water to boil the ducks.

Many Indonesian dishes will have sambal on the side, including these fried ducks. You can always make a different sambal but I picked Sambal Pencit to company.

You might ask me due to the use of calamansi which is NEVER been seen in Madura recipes. I like using calamansi more than using regular lime. Calamansi is better to eliminate strong odour of foods such as fish, duck or seafood.

Aside from chicken, duck is another poultry that is common in Indonesian dishes. Meanwhile, turkey is very rare to farm or raise as well as being served on Indonesian tables.

Where is Madura island located in Indonesia?

Madura island is located on the northeast of Java which is very popular with their batik as well as the foods. Their foods are very bold in term of spices and their batik’s patterns are typical the coastline colours. Bright colours!

Speaking about Madura, I drove two times to that island. One time, I visited my classmate back when I was a student in Bogor and the Suramadu bridge wasn’t built yet. I didn’t have a good experience with the foods back then. Another time, when I visited Indonesia in 2014. With 2 other foodies, I enjoyed foods, sceneries and batik. I guessed my tastebud has changed.

Where to get Lemon or Lime Basils in Edmonton, AB, Canada?

Indonesians enjoy their kemangi “Lemon basil or Lime basil” to company their sambal or throw them into some dishes such A type is basil that is NOT sold in grocery stores in Canada. Local nurseries will have the plants in summer. Ellerslie Gift & Garden and gardening vendors at Old Starthcona Famers Market are 2 places that I know selling them. Or you buy the seeds from some stores such as Superstore, Canadian Tire etc.

Let’s start some cooking and Don’t forget to enjoy Bebek Goreng Madura, Poyah, Sambal Pencit with fresh veggies or herbs such as Lime or Lemon Basils (Kemangi). Surely, Indonesians will eat them with nasi (cooked rice).

Again, I used Instapot to get a faster process to tenderize the ducks.

Bebek Goreng MaduraIndonesian Fried Ducks, Madura Style

Ingredients:
2 duck legs
1 tablespoons calamansi juice
250mL (1 cup) coconut water
50 mL (4 tablespoons) water
1 lemongrass, bruised
4 kaffir lime leaves, discard the midrib

Spices to be ground:
6 shallots
3 cloves garlic
1 tablepoon toasted coriander seeds
1/4 toasted white peppercorn
2-cm (4/5-inch) length ginger
3-cm (1 1/5-inch) length galangal
3/4 teaspoon turmeric powder
3 kaffir lime leaves, discard the midrib
3-cm (1 1/5-inch) length lower bulb of lemongrass, take the white parts, sliced
3 candlenuts
kosher salt to taste

Poyah Kelapa Kuning
56 g (2 oz) frozen grated coconuts
1 clove garlic, grated
kosher salt to taste
1/8 teaspoon turmeric powder
1 kaffir lime leaves, discard the midrib and torn

Sambal Pencit:
5 bird eyes chilies
3 shallots
1/4 teaspoon terasi (dried fermented shrimp paste)
kosher salt to taste
150g (5.3 oz) green mango, julienned
50mL (3-4 tablespoons) leftover oil from frying ducks

Methods:
Bebek GorengFried Ducks

  1. In a bowl, place 2 duck legs and marinate with calamansi juice and salt for 30 minutes. Set aside and keep them in the fridge.
  2. After 30 minutes, take ducks out from the fridge, rinse and part dry.
  3. In an Instapot bowl, marinate duck legs with ground spices (bumbu), lemongrass and kaffir lime leaves for 30 minutes. Set aside in the fridge.
  4. After 30 minutes, take the Instapot bowl out from the fridge. Add coconut water and water.
  5. Cook a mixture of duck legs with Instapot for 20 minutes with stew mode.
  6. Once it’s done, release the pressure. Fry duck legs with oil or you can use an Air Fryer.

Yellow Sauce:
Bring to left over cooking fluid of ducks to a boil again.

Sambal Pencit:
Grind chilies, salt, shallots, and terasi. Add julienne cut mangoes. Pour hot oil from the leftover of frying ducks. Mix and set aside.

Poyah Kelapa (Spiced Grated Coconut):
Thaw and roast frozen grated coconuts in the oven at the lowest temperature until dry but don’t let them get brown.

At low heat, toast garlic, turmeric powder and kaffir lime leaves. Add 1-2 tablespoons of duck broth. Combine toasted grated coconuts. Roast until dry.

Serve Bebek Goreng Madura with Sambal Pencit, Poyah Kuning and Fresh Veggies/Herbs. Don’t forget the cooked rice!
