Ingredients
- 625 g yellow noodle
- 340 g bean sprout
Gravy Ingredients
- 1 litre chicken stock
- 10 dried chillies
- 3 buah keras/candle nut
- 2.5 cm lengkuas/galangal
- 20 small onions
- 1 .5 cm turmeric
- Pound together above dried ingredients
- 1 tsbp coriander
- 2 small sweet potatoes- boiled, peeled, and mashed
- salt to taste
- 3 tsbp cooking oil
Garnishing Ingredients
- 3-4 hard boiled eggs- cut in wedges
- 2 potatoes boiled, peeled cut into cube
- 4 bean curd deep fried & cut into cube
- 5 slices prawn fritters broken into pieces
- 4 fresh red chillies sliced
- 3-4 limes halved
Method
- All the garnish need to be prepared before cooking gravy and noodle
- Heat oil and fry pounded ingredients and coriander powder until fragrant
- Add stock and bring to the boil
- Add mashed sweet potatoes to thicken gravy
- Add salt to taste and keep simmering gravy until required
- Boil water in a pan. Scald the noodle and beansprout drain and remove
- To serve put some noodle and bean sprout into individual serving plates
- Garnish well and pour in the hot gravy. Serve immediately
