Slammin' Sandwiches + Lindsey Vonn
INGREDIENTS
For the French Toast:
- 1-2 tbsp unsalted butter
- 3 eggs
- 2 tbsp heavy cream
- 1/2 tsp kosher salt
- 1/2 tsp pepper
- 1/2 tsp dill (dried or fresh)
- 1/4 tsp onion powder
- If you like a little spice, add in a dash of harissa, or hot sauce
- 4-6 slices of brioche bread
For the Candied Bacon:
- 12 slices thick-cut bacon
- 1 1/2 teaspoons finely ground black pepper
- 1/2 cup brown sugar
- Cooking spray
For the Maple Mustard Spread
- 3 Tbsp dijon mustard
- 4 tsp maple syrup
- salt and fresh cracked black pepper, to taste
- 1/2 cup mayonnaise
STEPS
For the French Toast:
Heat a large frying pan over medium heat. Melt 1 tablespoon of butter.
Whisk together the eggs, cream, and all the seasonings, including the hot sauce if using.
Dredge one piece of bread in the egg using a fork, make sure the bread has been completely soaked in the egg mixture. Let the excess drip off before adding to the pan.
Cook until the outside is golden brown and crisp and the inside is cooked through. The time will depend upon what type of bread you are using and the thickness, about 4 minutes per side for thicker bread and 2 to 3 minutes per side for sandwich bread.
Repeat with the remaining slices of bread. Remove bread from pan and let the pieces cool slightly.
For the Candied Bacon:
Heat your oven to 400 degrees. Lay out the bacon slices and season them with black pepper.
Put the brown sugar in a bowl and then dredge each piece of bacon in the sugar.
Line a rimmed cookie sheet with foil or parchment. Add a baking rack and spray with cooking spray.
Place the bacon in a single layer on the rack, then sprinkle the remaining brown sugar over the bacon.
Place the tray in the center of the oven and bake for 20-30 minutes until golden brown and fairly crispy. If not, resist the temptation to turn up the oven temperature, and cook the bacon 10 to 15 minutes longer. The bacon may also crisp up more when you remove it from the oven!
For the Maple Mustard Spread:
Whisk together the ingredients in a bowl until blended.
Assemble:
Spread some of the Maple Mustard on one of the French toast slices. Top with three to four slices of candied bacon, two thick slices of tomato (seasoned with some salt and pepper) and butter lettuce. Top with another piece of French toast, spread with some Maple Mustard as well.
