The Good Dish Richard Blais’ Everything Crusted Ahi Tuna Steak

With crispy potatoes and salsa verde!

4 (8 to 12-ounce) Ahi tuna steaks
1 teaspoon Yellow mustard
2 cups Everything bagel seasoning
1 cup Mayonnaise
1/2 tablespoon Sriracha
1 tablespoon Coconut aminos (or soy sauce)
1/4 cup Scallions, thinly sliced
1 tablespoon Pickled ginger, minced
2 tablespoons Sesame Oil
Crispy Potatoes:
3 to 4 pounds Marble potatoes
1/2 cup Ghee
Kosher salt and freshly ground black pepper, to taste
Salsa Verde (Makes 2 cups):
1 cup Parsley
1/4 cup Fresh mint leaves
1/2 cup Tarragon leaves
1/4 cup Basil leaves
1/2 Jalapeno, charred, deseeded, peeled, and minced
1 Lemon, juiced
1 teaspoon Anchovy paste
1 teaspoon Capers
1/2 cup Extra-virgin olive oil
1 Clove Garlic
1/4 cup White onion, chopped
1/2 teaspoon Kosher salt
1/2 teaspoon Freshly ground black pepper

For the Ahi Tuna:

In a large mixing bowl, combine the mayonnaise, mustard, sriracha, coconut aminos, green onions, ginger and 1 tablespoon of sesame oil to make a spicy mayonnaise. Set aside.

Fill a shallow plate or baking sheet with the everything spice. Brush all sides of the tuna with spicy mayo, then dredge in the everything spice.

Heat a nonstick skillet over medium heat. Add sesame oil and tuna and cook until well crusted and golden, 1 to 2 minutes, then flip and cook the other side until desired temperature is reached.

Remove from the heat and allow to rest for a minute before serving with potatoes and salsa verde.

For the Crispy Potatoes:

Fill a large pot with potatoes, cold water and salt. Bring to a boil.

Cook until potatoes are softened throughout, about 10 to 12 minutes. Heat a heavy-bottomed skillet over medium-high heat.

Add ghee and potatoes and cook until the edges start to crisp. Do not overcrowd the pan, this may need to be done in batches.

Once the potatoes are browned on both sides, remove from heat and season with salt and pepper to taste. Serve with jalapeno salsa verde.

For the Salsa Verde:

Place all the ingredients in the bowl of a food processor fitted with the blade attachment and pulse 6 to 7 times until a chunky salsa has formed.
